Cauliflower Flatbread

>>Howard: Every month here in the Test Kitchen we highlight
a cookbook that we think you’re gonna love. And with today
being American Diabetes Association’s Alert Day, which is a day devoted to all of us being
more familiar with type 2 diabetes… we thought that it would be the perfect time
to share a recipe from our new Diabetes-friendly, “Guilt-Free Weeknight
Favorites,” cookbook. All we do is cut a head of cauliflower into
chunks and either microwave it, or boil it until it’s tender. We can even use frozen. Once it cools slightly,
we place it in a food processor (or a blender) and process it until it’s the consistency
of … almost mashed potatoes. To that we add some mozzarella cheese, a couple
of eggs, a bit of garlic and a few spices. After mixing it, we spread it onto a baking
sheet and top it with even more cheese and pesto before baking it off. What we end up with, is one of the tastiest
flatbreads ever. Maybe finish it off with a few slices of tomato
and you’ll have a dish that’s amazing. I do hope you’ll go online and get the recipe
