How does fat affect us?

– Definitely, of all the
different dietary components, dietary fat is considered
in a sense to be a villain. And I think the most important thing that we should think about
when we think about dietary fat is that it’s not the
amount that is important. What’s really important
is the type of fat. So saturated fat, which primarily comes from meat and dairy fat, tends to raise LDL
cholesterol level levels. So those are considered to be
the bad type of cholesterol that circulates in our
body that’s associated with increased risk of
cardiovascular disease. Whereas unsaturated fat,
particularly polyunsaturated fat, which comes from liquid vegetable oils, tends to lower LDL cholesterol. So when we talk about
dietary fat, we talk about the ratio of unsaturated
fat to saturated fat. Now, why is it important for us? Well, it’s very important as
an energy source, probably we all survived because as a species, because we had the ability to store fat. It also serves as what we call a substrate or a building block for
very important molecules in our body, hormones and some vitamins. And then it does provide a certain level of insulation for temperature regulation. And again, that’s very
important for survival. So there are a lot of different ways of looking at dietary fat,
but I think, in general, we should consider it our friend.
