They contain beta-carotene, which the body can convert to vitamin A under the right conditions (eaten with fat). It is not an efficient conversion (not 1:1, it could be as much as 50:1 or greater), especially in the young, the old and people with compromised health. Beta-carotene is not equal to vitamin A. It is inaccurate and deceptive to say so. Preformed vitamin A is only found in animal fats.
